Ben’s Overnight Pizza Dough

Pizza is Happiness hand lettered.

The first recipe I’m sharing with you is in honor of my brother-in-law, Ben. He was a champion of both my food and my art, so it seems fitting to start there.

Ben had a PhD in BioChemistry, so when he decided to learn how to bake, it was definitely a scientific experiment. This recipe is the one he came up with for pizza dough. It comes together so easily, you don’t even have to knead it! The only trick is remembering to start it the night before.

Ben's Overnight Pizza Dough

This easy pizza dough comes together quickly and easily with no kneading. The long rise time gives your dough an incredible depth of flavor and a perfect chewy texture.

Ingredients

  • 1000 g all purpose flour
  • 700 g warm water (100 degrees F)
  • 1Tbsp salt
  • 1/4 tsp yeast

Instructions

Method:
  1. Combine warm water and yeast in glass measuring cup. Allow to sit for approximately 10 minutes, until yeast is frothy.
  2. Combine flour and salt in a bowl or plastic container with a lid.
  3. Add water and yeast mixture to the flour mixture.
  4. Stir until just combined. Cover with towel, plastic wrap, or lid and allow to sit at room temperature overnight.
  5. Divide dough into two equal sized balls and place on a piece of parchment paper.
  6. Cover with a tea towel or plastic wrap sprayed with non-stick spray.
  7. Allow to rise for 1-2 hours, until doubled in size.
  8. Preheat oven with pizza stone in it to 500 degrees F (or as high as your oven will safely cook at). Alternatively, you can use an unglazed tile.
  9. Roll, stretch, toss balls of dough to make them flat like a pizza without letting too much air escape (those bubbles help keep your crust light). Place on a piece of parchment paper on a pizza peel. If you don't have a pizza peel, that's okay! You can also build your pizza right on your pizza pan.
  10. Add desired toppings and slide onto stone or tile (if using) or place pan in the oven if you're not using a peel and stone. Cook for 10 minutes, or until crust is golden brown and cheese is bubbling.
