Smashburgers
Smashburgers are so delicious, and a great way to enjoy a burger during those cold winter months when grilling is less convenient. These cook quickly, so they’re great for a crowd. I prefer mine dressed simply, but you can choose how to present them. I’ll share some of our favorite combinations of condiments in the future. For now, go try out a smashburger and fall in love!

Ingredients
- 1 lb ground beef, preferably 80% lean
- salt
- oil for the pan
- american or cheddar cheese (optional)
Instructions
- Preheat cast iron or heavy skillet or griddle over medium high heat on the stove for 2-3 minutes, or until hot. Brush the pan with oil.
- Divide ground beef into four sections and lightly roll into balls (do not compact them).
- Place the balls of ground beef on the hot pan and use a spatula to smash meat into to 4" diameter patties. This will create craggly edges which are so great because they cook up nice and crispy to give your burger texture. Sprinkle liberally with salt.
- Allow to cook for 2 minutes, then flip patties over and sprinkle the other side with salt.
- If using cheese, place a slice of cheese on each patty and cook until the cheese is melted. You can also cover each patty with the lid from a pan to help the cheese melt evenly.
- Serve on toasted hamburger buns.
